His experience in the hospitality industry ranges from Resorts, Hotels, corporate catering, restaurant operations and extensive experience in the healthcare industry. With a career spanning over 20 years he has been exposed to various food service systems include cook chill and sous vide. James is a qualified chef and Environmental Health Inspector and lectures at Catering Colleges in Sydney.
